Ingredients

2 tbsp of Spice Pantry Middle Eastern Spice Blend
- 30-60ml olive oil, depending on how big the joint isĀ
- 1.5kg lamb shoulder or LegĀ
- 8 small sprigs of rosemary (optional)Ā
Potatoes (roast or new) vegetables and Gravy

Mix 2 tbsp of Spice Pantry Middle Eastern Spice Blend together with the olive oil & brush into the surface of the lamb generously. Using a small knife, pierce lamb all over & insert rosemary sprigs.

Pre-heat your oven to 400Ā°f/ 200Ā°c/180Ā°c fan/ gas mark 6

Cook lamb for 30 minutes until nicely browned. Once browned enough, wrap the shoulder in a layer of foil. Lower heat to 320Ā°f/ 160Ā°c/ 140Ā°c fan/ gas mark 3 -cook for a further 2 hours until the lamb is tender.

Rest the lamb before carving, about 10 minutes should be enough.
