This is a flavour packed alternative to the seafood Jambalaya you often find. The Cajun spice blend packs a punch with flavour and is not spicy hot. It's a great one pot meal that's probably more like 45 minutes to cook but for the last 30 minutes it's just simmering so not a lot of work there! Enjoy.

Ingredients

1 tbsp Spice Pantry Cajun Spice Blend (1½ for a stronger flavour)
3 tbsp olive oil
- 4 chicken breasts (cubed)
1 large onion (diced)
- 1 red bell pepper (thinly sliced)
1 tbsp minced garlic
- 75g Chorizo (sliced) or Pepperoni
- 250g long grain rice
400g tin chopped tomatoes
- 500ml chicken stock
- Crusty bread to serve (optional)

Slice the pepper, chop the onion and cube the chicken.
Let’s cook

Heat the oil in a wok or large saucepan. Add the onion and cook until soft, add the peppers, garlic and 1 - 1.5tbsp Spice Pantry Cajun Spice Blend and cook for 1 minute on a medium/high heat stirring frequently.

Add the chicken and chorizo and cook for a further 5 minutes.

Add the rice, tomatoes and chicken stock, cover and let it simmer 20-30 minutes until the rice is soft and tender.

Serve in bowls with some crusty bread.
