This is a simple but really tasty alternative to bland chicken in a bun (or a sandwich of course). It's something you may have never tried before. Definately a firm favourite in our family. Enjoy!

Spice pantry Za’atar Spice Blend (1 tsp per breast)
2 chicken breasts
Spray oil (any type)
Buns: burger buns, brioche or ciabatta, French stick, (even a crusty white roll will work!) Choose your favourite there are no rules!!
lettuce, cucumber, tomato, gherkins, tomato sauce or mayonnaise.

Let’s Prep

Coat your chicken breasts with the Za’atar seasoning as a dry rub for the most intense flavour or…

In a bowl combine 4 tablespoons of oil and 2 tsp of Spice Pantry Za’atar Spice Blend. Lightly brush and cover the chicken with the combined mixture, making sure you cover both sides.
Let’s cook
Air fryer

Place your chicken in the air fryer and cook for 10 minutes at 180°c, then turn and cook for a further 8-10 minutes or until chicken is fully cooked. If you have a meat thermometer, then the internal temperature should be 165°f/ 74°c.
Oven cook

Preheat oven to 180°c. If using the fry rub method, spray the chicken with a little oil. Cook on rack or a baking tray, loosely cover the chicken in foil and set oven at 180°c and cook for 10 minutes, then remove the foil turn the chicken over and let it cook for a further 10 minutes or until chicken is cooked through.
Stove top

Cook on a medium/low heat with a splash of oil for 8 minutes, turn and cook the other side for 6-8 minutes or until chicken is fully cooked.

We always put a lid over the pan as it steams and fries at the same time making the chicken moist and tender.
Barbecue

Butterfly the chicken or cut into strips before cooking to ensure even cooking. Turn frequently and test with a thermometer in the thickest part of the meat. It should be 165°f/ 74°c.

Serve in a bun, we like using toasted ciabatta rolls but brioche, burger buns or even a crusty white roll will work just fine with fries or wedges. Also, very good sliced up in sandwiches with a dollop of mayonnaise.
Filling suggestions

Lettuce, tomato, cucumber, cheese, relish, tomato sauce or mayo (my favourite!). Get creative!

Choose your bun. I like ciabatta rolls toasted on the inside. Add a knob of butter to a frying pan, melt and place the cut rolls on the butter and toast for 30 seconds. Lovely! But hamburger rolls, baguette, brioche rolls are all good.

Add the chicken to your bun with your favourite additions. I like mayo, lettuce, onions and tomatoes but the choice is yours. There are no rules.

Recipe Note
Top tip: Cook an extra couple of breasts, slice them and add to your favourite bread the next day with butter and mayonnaise as an exotic packed lunch. I always do that and it's so much better and less expensive than shop bought chicken slices.
