This spice blend will push your home cooked Spanish chicken to another level, our whole ethos here is easy home-made cooking and this fits the bill perfectly! We never go a month without cooking this ourselves. I love it! This is our own recipe tried and tested over many years.

Ingredients

1 tbsp Spice Pantry Spanish Chicken Blend
- 3 Chicken breasts cut into large chunks
- 1 large onion
- ½ Chorizo Sausage (or more if you desire)
- 2 Bell Peppers chopped into chunks
- 300ml chicken stock
- 1 tin chopped tomatoes
1 tbsp sugar
1 tbsp tomato purée
Cornflour (optional)
Rice and vegetables to serve

Slice and dice your chicken onion and bell peppers.

Slow cooker

Using a large frying pan with a little oil in, fry the onions until soft then add the chicken and chorizo along with 1 tbsp of Spice Pantry Spanish chicken blend and mix well, seal the chicken and make sure it is coated with the spices and the chorizo has started to release its oils.

Once sealed and coated add this mixture to the slow cooker along with the chopped Bell peppers, chopped tomatoes, sugar, Chicken stock and tomato purée, mix well and cook on low for 6-8 hours or high for 4-6 hours. Add 2 tsp of cornflower in water 15 minutes from serving to thicken the sauce.

Using a large saucepan with a little oil in, fry the onions until soft then add the chicken. Cook for 5 minutes stirring frequently. Ramp up the heat and add 1 tbsp of the Spanish chicken spice blend. Stir on high for one minute then return to medium heat.

Add the rest of the ingredients stir well and simmer for a further 15 - 20 minutes or until you have the desired sauce consistency. Add cornflower if needed or just reduce the sauce down.

If adding corn flour, just use 1 tbs added to 2 tbs of the liquid. Once added to the slow cooker, stir and cook until desired thickness is achieved.
