The longer you cook your beef the more tender it gets. This tantalising Barbacoa spice blend with slow cooked beef is amazing and so easy to do. Give it a try.

Ingredients

1 tbsp Spice Pantry Barbacoa Beef Blend
- 30ml fresh lime juice
2 tbsp vegetable oil
- 400g-500g diced beef or cubed rump steak
- 300ml beef stock
- Salt and pepper to season
Mashed potatoes/ rice or tacos/ pittas or wraps

Dice up your beef into large cubes if it’s a steak and place in a frying pan with a little oil and brown the meat.
To a food processor add the stock, salt, pepper, lime juice & our Spice Pantry Barbacoa Spice blend and blitz until smooth. If you don’t have a food processor just mix the ingredients together with a whisk, it will be fine!
Let's Cook!

Place your slow cooker on a low heat & add all the ingredients to the cooker. Cook for 6-8 hours. Once cooked, beef will be tender - whilst the beef is still in the slow cooker, shred with two forks and keep slow cooker on low to warm before serving.
Serving suggestion

You can keep the beef as is and serve with mashed potatoes and vegetables (we have done this, and it is delicious)
Make a wrap. add chopped onions, cucumber and tomatoes to the wrap with the pulled beef - lovely! Tacos work well too and pitta bread. Choose your favourite.
Recipe Note
It doesn’t need to be specifically rump steak, you can use chuck roast (braising steak) beef cheeks or even brisket. You will still need to dice these up. Any beef will do because you are slow cooking it.
