Nothing better on a winters night than sausage casserole with mashed potatoes and a glass of wine (ok or two!) This is a great multi use sausage spice blend that has changed several times over the years. It turns plain sausages into something quite special. Garlic, oregano, onion powder a touch of black pepper, bit of salt and a little fire with cayenne pepper makes this sausage seasoning mix a delicious go to blend for us. Ingredients

1½ tbsp Spice Pantry Sausage Delight
4 tbsp olive oil
8 thick pork sausages
200g sliced chorizo (optional)
- 1 large or 2 small onions, finely chopped
- 2 medium sticks celery, finely chopped (optional)
- 1 yellow pepper chopped
- 1 red pepper chopped
125ml white wine (optional but really nice!)
2 x 400g tins of chopped tomatoes
1 chicken stock cube in a little hot water
- 400g tin cannellini or mixed beans drained
Serve with rice or mashed potatoes (Mash for me)

Let’s Prep

My prep for this is get a cold glass of white wine on the worktop! Then slice and dice the onions and peppers. Add the stock cube to a little boiling water and open the tines of tomatoes and mixed beans. Done.
Let’s cook
Stove top

In a pan (a wok is ideal) add oil and sausages and get them brown. Don’t worry about cooking them thorough, we just want the cooked outer. Then add the chorizo and cook for a few minutes until the oil is released, Remove from Pan and set aside to add later.

In the same pan add a little more oil if required oil and gently cook your onions for 3-4 minutes, add the celery (optional) red and yellow peppers and cook for 5 minutes. Ramp up the heat and add the spice blend. Stir and cook for one minute.

Pour in the white wine, chicken stock and tomatoes and simmer for 10 minutes.

Add the beans, sausages and chorizo and cook for a further 15 minutes. That’s is, enjoy!
Slow cooker

In a large frying pan add the sausages and brown them. Add onions, chorizo, peppers and celery and cook for 5 minutes. Then ramp up the heat and add the spice blend. Stir for one minute and add to the slow cooker. Scrape out that pan! We want it all in the slow cooker.

Add all remaining ingredients to the slow cooker and mix well, cook on high for 4 hours or low for up to 6-8 hours.
Enjoy!
