You can of course used chicken thighs, chicken breast or chicken legs for a smaller meal. I would use a whole chicken and just pick at it for several days after. Peruvian spiced chicken with Mayo in a fresh baguette - OMG!

Ingredients

2 tbsp of Spice Pantry Peruvian Spice Blend
4 tbsp olive oil
2 tbsp fresh lime juice
- Medium/large whole chicken
- 1-2 medium jalapenos, chopped
2 tbsp olive oil
1 tbsp coriander powder
2 garlic cloves, minced or 1 tsp minced garlic
- 125ml mayonnaise
- 60ml sour cream
1 tbsp lime juice
- Salt & pepper to taste

Time to spice up that chicken

In a bowl, mix olive oil, lime and 2 tbs of our Spice Pantry Peruvian Spice Blend together to make a paste. With the chicken, make sure the giblets are removed and dry off the chicken with kitchen roll. Lift the skin up carefully over the breast and thighs and brush under the skin with half of the paste, use the rest to brush over the outside of the chicken and leave to marinate in the refrigerator for at least 1 hour
The green sauce

Set aside the olive oil. Blend together all the other ingredients and then slowly add the olive oil as you stir. Once combined, place in a bowl and refrigerate until the chicken is served.

Preheat oven to 425°f/220°c/200°c fan/ gas mark 7

Place in a roasting tray that has been sprayed with oil and roast in the oven for 20 minutes, the skin should be golden brown.

Turn down the oven to 375°f/ 190°c/ 170°c fan/ gas mark 5 and continue to cook for one hour or until the juices are clear. If the skin looks like it might be going brown too quickly, cover it loosely with foil.

Remove from the oven and cover loosely with foil and let it rest for 15-20 minutes.

Before carving make sure the juices are drained from the chicken.

There are so many options! Serve with potatoes (new or roast) and vegetables, grilled peppers, salad is also a great option with a few spicy wedges. oh and don’t forget savoury rice. Enjoy!
