Ingredients

Spice Pantry Peruvian Spice Blend (1 tsp per breast)
- 4 chicken breasts (you can slice them in half if it’s a large breast)
- Spray oil or normal
Buns: burger buns, brioche or ciabatta (even a crusty white roll will work)
- lettuce, cucumber, tomato, cheese, relish, Tomato sauce or mayonnaise.
- Chips or wedges to serve

Slice your Chicken breast sideways if it's too big to fit in a burger and coat it with the seasoning as a dry rub, you can give it a little spray of oil if you wish just to help the chicken stay moist. Or...

In a bowl combine 1 tbsp of oil and 4 tsp of Spice Pantry Peruvian Spice Blend. Lightly brush and cover them with the combined mixture, making sure you cover both sides.
Let’s cook
Air fryer

Place your chicken in the air fryer and cook for 10 minutes at 180°c, then turn and cook for a further 8-10 minutes or until chicken is fully cooked. If you have a meat thermometer, then the internal temperature should be 165°f/ 74°c.
Oven cook

preheat oven to 350°f/ 180°c/ 160°c fan/ gas mark 4

Spray the chicken with a little oil as the oven does tend to dry it out a bit. Cook on rack or a baking tray, cover the chicken in foil and cook for 10 minutes, then remove the foil and let it cook for a further 10 minutes or until chicken is cooked through.
Stove top

Pour some oil into a large frying pan on a medium high heat and add the seasoned chicken and cook for 3 minutes each side. Continue to cook on low for another 10-12 minutes or until the chicken is fully cooked, we place a lid over the pan which keeps in the moisture and makes the chicken juicy and tender.
Barbecue

Cook whatever way suits, make sure chicken is fully cooked.

Serve in a bun, we like using toasted ciabatta rolls but brioche, burger buns or even a crusty white roll will work just fine with fries or wedges. Also, very good sliced up in sandwiches with a dollop of mayonnaise.
Filling suggestions

Lettuce, tomato, cucumber, cheese, relish, tomato sauce or mayo (my favourite!). Get creative!

Choose your bun. I like ciabatta rolls toasted on the inside. Add a knob of butter to a frying pan, melt and place the cut rolls on the butter and toast for 30 seconds. Lovely! But hamburger rolls, baguette, brioche rolls are all good.

Add them all together just how you like it.

Recipe Note
Cook an extra couple of breasts, slice them and add to your favourite bread the next day with butter and mayonnaise. I always do that and it's so much better and less expensive than shop bought chicken slices.
As with most of our recipes, they can be turned into a vegetarian option just by swapping out the meat, be careful as the timings may differ.
