Ingredients

1 tbsp Spice pantry Onion Bhaji Blend
- Oil for deep frying, vegetable oil is good
- 2 large onions peeled and sliced thinly
1 large green or red chilli finely chopped
- 130g Gram flour (chickpea flour)
1 tbsp cornflour
- ½ tsp bicarbonate of soda/ baking soda
Add water until thick batter achieved
Directions
Lets prep

Sieve the flour into a mixing bowl, add the baking soda. cornflour, 1 tbsp of onion bhaji spice blend and chopped chilli.

Mix together and add water until a thick batter is achieved. Just add the water a bit at a time so you get a thick paste.

Add the sliced onions and mix well together.

Heat the oil in a large heavy bottomed pan making sure it is only half full to avoid it spilling over.
Let's cook

Test the oil by dropping a bit of the mixture in the pan, it should fizzle and rise to the surface or if you have a food thermometer it should be 170°c.

Take a tablespoon sized amount of the bhaji mix and lower carefully into the oil. We don’t really want a ball as the middle does not cook as well. Repeat so you have 3 or 4 in at the same time, keep an eye on the oil, if it starts to get close to boiling over the top then do not add more until they are done.

Fry for around 3 minutes and turn over. Continue for another three minutes or until the bhaji are a golden-brown coating. Remove with tongs and place on kitchen roll. Repeat until all the mixture is used, you can keep the previous batches warm in the oven at 130°c/ gas mark ½/ 110°c fan.

Serve with any curry or as a snack.

You can refrigerate for up to 2 days or let them cool and place them in bags and freeze for up to 3 months. Defrost them in the refrigerator and reheat them on a baking sheet on 200°c/180°c fan/ 400°f/ gas mark 6 for 5-7 minutes, until cooked through.
Recipe Note
This recipe will make around 12-15 bhaji's. Top tip double up and freeze them for a great snack or to accompany your next curry!
