Ingredients

Spice Pantry Moroccan Spice Blend (2.5 tbsp)
500g boneless thighs or breast cubed
- 1 onion diced
- 1 butternut squash diced
- 2 leeks sliced
400g tin of chopped tomatoes
400g tin of chickpeas
1 tbsp tomato paste
- 100ml chicken stock
3 tbsp lemon juice
40g chopped dates
Directions
Let's prep

In a frying pan on a medium heat, seal your cubed chicken.

Open the tin of chickpeas, drain, rinse and put to one side.
Let’s cook

Put aside the lemon juice and dates. Add all the remaining ingredients to the slow cooker, stirring well, then cover with the lid.

Cook on low for 6-8 hours or high for 4-6 hours

30 minutes before serving add the lemon juice and dates stirring well, continue to cook for another 30 minutes.
