Greek Chicken Gyros Skewers

Chicken Gyros is a lovely skewered meat that is cooked and then sliced or taken straight from the skewer.
they have their origins in Greek cuisine but you will find variations in Turkey and the middle east (Shawarma). Easy to make and great in a pitta with some salad.
We have increased the recipe to serve six as its a favourite barbecue food but you can adjust accordingly for less people.

Ingredients

2 tbsp of Spice Pantry Greek Chicken Gyros Blend
570g Greek yogurt
- 60ml lemon juice
- 180ml olive oil
900g boneless chicken thighs tenderized so they are flat or chicken breast. Cut whatever chicken you choose into bitesize pieces.
- Pitta bread
- Salad
- Chips or wedges

Let’s Prep

Take all the marinade ingredients and mix well in a bowl.

Add diced chicken to the marinade, making sure all the chicken is covered. Then cover and place in the fridge for at least 1 hour and no more than 24 hours.

Add chicken to skewers, discard unused marinade.
Let’s cook
Oven cook

Preheat your oven to 425°f/220°c/ 200°c fan/ Gas mark 7

Use a wire rack to rest the chicken on. Cook for 25 to 30 minutes turning several times until the chicken is fully cooked.
Stove top

Once skewers are assembled place them on a slightly oiled griddle pan. Cook for 10-15 minutes turning every 2 minutes to make sure it’s all fully cooked.
Air fryer

Cut the wooden skewers in half or buy smaller skewers to fit the air fryer. Sounds obvious in know but i forgot and only had metal skewers!

Put your chicken skewers in the air fryer and cook for 10 minutes at 180°c, then turn and cook for a further 8-10 minutes or until chicken is fully cooked. If you have a meat thermometer, then the internal temperature should be 165°f/74°c. Then let them rest for a few minutes.
