Mexican Spice Heaven!
Spice up your chicken or pork with this zesty flavoursome spice blend. It transforms plain chicken or pork into a taste sensation that takes just two minutes to prepare. Perfect with rice and veg for a healthy meal or as we have here a wonderful sandwich.

This spice mix will leave a wonderful tang on your tongue, we have used it on chicken and pork and it was equally good. We cook chicken breast and thigh with this and make rolls the next day for work with mayo. Its amazing and a favourite of the whole family.

Ingredients

Spice pantry Mexican Spice Blend (1 tsp per 1 breast)
2 chicken breasts (you can slice them in half if it’s a large breast)
- Spray oil or normal
Buns: burger buns, brioche or ciabatta, baguette or a fresh crusty roll.
lettuce, cucumber, tomato, cheese, relish, Tomato sauce or mayonnaise. Of course it will need chips or wedges on the side as well!

Let's Prep!

Slice your Chicken breast sideways (you get more of the spice blend on it that way)

In a bowl combine a 2 tbs of oil and 2 tsp of Spice Pantry Mexican Spice Blend. You can add more if you wish to increase the flavour. Lightly brush and cover them with the combined mixture, making sure you cover both sides.
Let’s cook
Air fryer

Place your chicken in the air fryer and cook for 10 minutes at 160°c, then turn and cook for a further 8-10 minutes or until chicken is fully cooked. If you have a meat thermometer, then the internal temperature should be 165°f/ 74°c.
Oven cook

Spray the chicken with a little more oil as the oven does tend to dry it out a bit. Cook on rack or a baking tray, cover the top of the chicken in foil and set oven at 180°c and cook for 10 minutes, then remove the foil and let it cook for a further 10 minutes or until chicken is cooked through.
Stove top

Pour some oil into a large frying pan on a medium high heat and add the seasoned chicken and cook for 7 minutes each side or until the chicken is fully cooked, we place a lid over the pan which keeps in the moisture and makes the chicken juicy and tender.
Filling suggestions

Serve in a bun or a sandwich. We like using toasted ciabatta rolls but brioche, burger buns or even a crusty white roll will work just fine. Also, very good sliced up in sandwiches with a dollop of mayonnaise the next day.

Lettuce, tomato, cucumber, cheese, relish, tomato sauce or mayo (my favourite!). Get creative!

Add them all together just how you like it.

Recipe Note
Cook an extra couple of breasts, slice them and add to your favourite bread the next day with butter and mayonnaise. I always do that and it's so much better and less expensive than shop bought chicken slices.
