Ingredients

3 tbsp Spice Pantry Jerk Spice Blend
6 Chicken legs skin on or 4 chicken thighs or 3 chicken breasts
4 spring onions trimmed
60ml Soy Sauce
60ml Vinegar or Apple cider vinegar
2 tbsp Olive oil
75ml smooth orange juice
1 tbsp Lime juice
2 tbsp Brown sugar
Salt & Pepper to taste
Rice to serve

Let's Prep

Put your Spice Pantry Jerk Seasoning Blend and the rest of the ingredients into a blender and blend until smooth.

Take your chicken of choice (mix and match cuts even!) and using a knife poke holes in them so the marinade infuses deep into the meat.

Place your chicken into a bowl or dish and cover with the marinade, you can save some marinade to pour over the cooked chicken. Don’t use the marinade that’s had the chicken in though. (make sure you heat up the remaining marinade by simmering for 5 minutes).

Marinade your chicken in the refrigerator for at least 2 hours or overnight if you can.
Let's Cook!
Oven Cook

Heat your oven to Gas 6, 400°f/ 200°c/ 180°c fan

Once you are ready to cook, set the chicken in a baking tray and discard the marinade (not the saved marinade).

Bake the chicken for 35-40 minutes turning at least once. If you have a meat thermometer the internal temperature should be 165°f/ 74°c
Air Fryer

Set temperature to 180°c

Place your marinated chicken in a single layer in the air fryer and cook for 18-20 minutes turning halfway through. Chicken on the bone takes a little longer so check its cooked through.

Rough guide for chicken: boneless thighs 180°c 15 minutes, drumsticks 180°c 20 minutes, wings 180°c 25 minutes or breasts 180°c 18-20 minutes. These are rough guides, you just need to make sure they are cooked.
Slow Cooker

Whatever chicken you are using, you need to brown it in a pan before it goes in the cooker.

Blend all the ingredients together as normal and then pour on to the chicken in the cooker.

Cook on low for 6-8 hours or high for 4-6 hours.
