Its all in one casserole dish and you just pop it into the oven! Take 10 mins to prep and an hour to cook. This works with all of our curry spice blends. Its wonderfully creamy, tastes amazing and one of our best easy n delicious recipes.

This a great easy and uncomplicated traybake the makes the best no fuss curry! We loved it the first time we tried it and it's perfect when friends come round. You mix and throw it in the oven. An hour later it ready to serve. It works great with all of our curry spice blends. I'm converted and I am sure you will be too!

Ingredients
2 large Chicken breasts or 6 chicken thighs chopped into 1-inch chunks (roughly, it doesn’t need to be exact!)
2 tbsp of any spice pantry curry spice blend.
1 large onion or 2 small onions finely sliced
400g chopped tomatoes
400g coconut milk or evaporated milk
Olive oil to cook
1 pepper sliced and diced
450ml of water
400g of long grain rice

Spice Pantry Curry Roast Potato Blend
Serve with poppadom’s, samosas, naan bread and bhaji’s or just straight out of pot on its own. You choose.

In a pan add the olive oil and the chicken, when the chicken is sealed (has turned white) add the onions and peppers. Cook on medium heat for 5 mins.

Add your chosen spice blend to the pan and mix it all together. Cook for a further 2 mins. Take off the heat.

Preheat the oven to 350°f/ 180°c/ 160°c fan/ gas mark 4

In a casserole dish add the chopped tomatoes, the coconut milk or evaporated milk, water (1 and a half tins of one of the tins used), the rice and the contents of the pan. Stir it up and place on the middle shelf of the oven with the lid on.

Cook for 1 hour and stir halfway through cooking. If the sauce is too thin just leave the top of the casserole dish and return to oven for ten minutes.
