1 tbsp Spice Pantry Chana Masala Blend
400g tins chickpeas
1 medium onion finely chopped
200g (half a tin) chopped tomatoes
2 tbsp oil
1 tsp lemon juice
150ml of water
- Salt to taste
Coriander to garnish (optional)

Open the tins! That’s about as difficult as it gets!

In a pan over a medium heat add the onions to oil and cook until translucent (about 5 minutes) and 2 tbsp of Spice Pantry Chana Masala Blend and cook for a few minutes, making sure you stir regularly to stop the spices burning.

Add the tomatoes and cook for a further few minutes. Then use a hand blender to turn the mixture into a smooth sauce. You can also tip the contents into a normal blender if you don’t have a hand blender and return the mixture to the pan.

Add the chickpeas, water and salt and simmer for 12-15 minutes.

Add the lemon juice at the end and stir, its ready to eat.
