Burmese pork curry is easy to make and delicious but it sits on the stove for two hours so it isn't a fast meal but its worth the wait! Pork is such a cheap meat compared to many and because this is slow cooked it melts in your mouth. Its a monthly weekend staple in our family. It just uses basic ingredients you will have in the home and of course our amazing spice blend! Try it, I am sure you will love it as much as we do!

Ingredients

1 tbsp Spice Pantry Burmese Curry Blend
2 tbsp fish sauce (or soy sauce)
- 1kg pork leg or shoulder, diced
½ tsp ginger paste
- 500ml of vegetable stock
- 2 large onions, chopped
¾ tsp garlic paste
4 tbsp vegetable oil
- 100ml malt vinegar
1 tbsp sugar

Directions
Let's Prep!

Dice the pork and chop the onions
Let's Cook!
Stove Top

Toss the pork in vinegar and leave for 15 minutes. Place in a saucepan – discard the vinegar as you do this- fill pan with water until the pork is just about covered. Bring to the boil over a high heat, then reduce to medium & simmer for 15 minutes.

Whilst cooking in a separate pan add the onions and fry until translucent (around 5 minutes). Add the garlic, ginger and Spice Pantry Burmese Curry Blend. Cook on high for one minute, add a little water if its too dry, we don’t want to burn the spices..

Remove the pork from the saucepan, reserve the cooking juices in a bowl & place to one side. Add to the onions.

Return the cooking juices to the pan along with soy sauce, pepper, sugar & stock. Bring to the boil.

Reduce heat & simmer for 1½ hours. The pork will be tender & the sauce will reduce & appear caramelized & sticky.

Recipe Note
This blend is suitable for vegetarians, just swap out the meat (and other meat products) for a meat-free option but be careful as the timings may differ.
