Ingredients

Spice pantry American Spice Blend (1 tsp per breast)
2 chicken breasts (you can slice them in half if it’s a large breast)
Spray oil (any type)
Buns: burger buns, brioche or ciabatta (even a crusty white roll will work), baguette, wrap. Choose your favourite!
- lettuce, cucumber, tomato, cheese, relish, Tomato sauce or mayonnaise.

Let's Prep

Slice your Chicken breast sideways so you have two per breast. Coat it with the seasoning as a dry rub, you can give it a little spray of oil if you wish just to help the chicken stay moist. Or...

In a bowl combine 4 tbs of oil and 2 tsp of Spice Pantry American Spice Blend. Lightly brush and cover them with the combined mixture, making sure you cover both sides.
Let's cook
Air fryer

Place your chicken in the air fryer and cook for 10 minutes at 170°c, then turn and cook for a further 8-10 minutes or until chicken is fully cooked. If you have a meat thermometer, then the internal temperature should be 165°f/ 74°c.
Oven cook

preheat oven to 350°f/ 180°c/ 160°c fan/ gas mark 4

Cook on rack or a baking tray, cover the chicken in foil and cook for 10 minutes, then remove the foil turn the chicken over and let it cook for a further 10 minutes without foil until chicken is cooked through. The internal temperature should be 165°f/ 74°c.
Stove top

Pour some oil into a large frying pan on a low to medium high heat and add the seasoned chicken. Cook for 8 minutes each side. We place a lid over the pan which keeps in the moisture and makes the chicken juicy and tender. The internal temperature should be 165°f/ 74°c when cooked.
Barbecue

Keep turning as you cook and make sure it is cooked through. Its a barbecue, i don’t need to tell you how to cook chicken on a barbecue lol.

Serve in a bun, we like using toasted ciabatta rolls but brioche, burger buns or even a crusty white roll will work just fine. Also, very good sliced up in sandwiches with a dollop of mayonnaise the next day. So cook extra!

Recipe Note
Cook an extra couple of breasts, slice them and add to your favourite bread the next day with butter and mayonnaise. I always do that and it's so much better and less expensive than shop bought chicken slices.
