Ingredients

1 ½ tbsp Spice Pantry Adobo Spice Blend
6 skin-on bone-in thighs (you can use 3 chicken breast or 6 drumsticks if that’s what you prefer)
120ml Soy Sauce
125ml White wine vinegar
1 tsp cracked black pepper (ground is ok if you don’t have that)
Salt and Pepper to taste
Rice and vegetables to serve

In a large pan, combine soy sauce, white wine vinegar, black peppercorns & Spice Pantry Adobo Spice Blend. This is the base whatever cooking method you choose.
Let's Cook
Stove Top

Place the chicken thighs skin side up in the pan with the sauce in it. Cook by bringing it to a boil over a high heat. Then cover the pan, reduce heat & simmer for 20 minutes.

Turn the chicken over and cook for an additional 10 minutes.

Uncover & return the sauce to a boil on a high heat. Intermittently turn the chicken & baste it in the sauce. Continue until sauce is reduced by half & thickened. It’s ready to eat.
Oven cook

preheat oven to 375°f/ 190°c/ 170°c fan/ gas mark 5.

Marinate the chicken for 20 minutes in the above mixture, then place the chicken skin side down and cover with the marinade. Cook, covered, for 30 minutes.

Uncover and flip chicken and baste with the mixture, cook uncovered for another 25-30 minutes until chicken is cooked through and sauce is reduced and thickened.

Serve with rice and vegetables.
